Preheat oven to 375 degrees.
Spray or grease mini muffin pan.
Cream together 1 cup of Pink Bee Honey and butter.
In another bowl mix together flour, whole grain oats, salt, vanilla and baking soda.
Whisk 2 large eggs in a separate bowl.
Add olive oil to eggs.
Mash bananas into egg mixture.
Put together all wet and dry ingredients and mix well.
Add blueberries and stir.
Add mixture into muffin pan.
Bake for 15 minutes.
Remove from oven and let stand to cool.
Dust muffins with cinnamon and 3 tbsp. of Pink Bee Honey while still hot.
Makes 24 muffins.
If making a loaf, add 5-10 minutes of cooking time.
