Lavender Collins

 2 oz Gin
 Fresh Lavender
 ½ cup Pink Bee Crystallized Honey
 ½ cup Water
 1 Lemon
 1 Egg White
 Soda Water

Create lavender Pink Bee Honey simple syrup (in a pot bring to a boil 1/2 cup Pink Bee Honey, 1/2 cup water, and fresh lavender).
Reduce for 5 minutes and let stand until room temperature.
Take a short rocks glass and rim with Pink Bee Honey crystals.
In a cocktail shaker add gin and 1 oz. of lavender Pink Bee simple syrup.
Squeeze lemon and add an egg white.
Shake all of the ingredients.
Pour into the rocks glass and top with soda water.
Garnish with a lemon wheel and fresh sprig of lavender.
